Cauliflower. Believe it or not, this under-appreciated veggie is great at mimicking rice. Just pulse it in the food processor until it looks like small rice particles, and cook it for 4-6 minutes, sauteed or boiled. Logically, the next step is to form it into a pizza crust. All it takes is a little pressed and processed cauliflower, some egg, goat cheese, and spices. Bake it in the oven, and you’ve got yourself a healthy, low-carb pizza crust. For more specific directions, check out the step-by-step recipe.
Almond flour. The mighty king of low carb, gluten-free substitutions, almond flour is perfect for just about anything, including pizza crust. Add a little egg, parmesan, and spices, and you’ve got yourself a crispy pizza crust that is lower in carbs and full of healthy fats. The nutty flavor isn’t too bad either. You’ll also find that this pizza crust is more filling than a traditional crust, with the added fat and protein of the almonds providing more satisfaction.
Mashed potatoes. Yes, you can actually merge your 2 favorite foods into one! Mashed potatoes, when mixed with 1/4 cup of flour (any type of flour will do; wheat, almond, oat, coconut, etc.), make an awesome pizza crust. Spread it thin on a greased cookie sheet and bake until it’s crisped. Be aware, these are still pretty starchy if you’re trying to cut back on the carbs. (For another brilliant idea: use mashed sweet potato instead and top your pizza with goat cheese, kale, and stripped chicken for an entire meal in one lofty bite! Sweet potatoes are more nutritionally rich than white potatoes, and might make a healthier choice for your crust.)
